Cucumber Boats.

This is one of my favourite light recipes to make, when I’m so short of time. I sometimes make this for breakfast with chicken and spiced mayo, and sometimes with homemade mayo and the result is always lip smacking. 

So let’s get started, shall we? 

Ingredients

Straight, thick cucumber without blemishes and bends. -2 

Spiced Mayonnaise - 100 gms

Tuna- half a can. 

Cooked and chopped ham- 50 gms

Method

Start blending the mayonnaise and tuna straight away in a bowl, until smooth. Add seasonings of your choice.

Cut the cucumber down the middle vertically in two equal halves. 

Now use a flat metal spoon or icecream scoop to scoop the seeds and the soft part of the cucumber out, leaving back a thick, solid hollowed-out cucumber boat.

Now carefully scoop in the mayo-tuna mixture into the boat and add chopped ham and mint leaves for garnish and serve right away. 

This can be cut up into bite sized pieces or stuffed into sandwiches as well. It can be served for a light breakfast too or as an evening snack. You can choose to either peel the skin of the cucumber or leave it as it is.
